While Morocco is not historically famous for aged cheeses, this tangy, fresh, and crumbly white cheese is a treasured cornerstone of our northern breakfasts. Wrapped in woven palm leaves to drain, it is the pure, unadulterated taste of our highest altitudes.

How is authentic Moroccan Jben made?

The production of Jben is a proof to the simplicity and purity of our ancestral culinary traditions.
  • Fresh, raw goat's milk (or sometimes a mix of goat and cow's milk) is left to curdle naturally in warm temperatures.
  • The thick curds are gently separated from the whey using a pinch of salt.
  • The mixture is scooped into small, conical baskets woven from dwarf palm leaves (doum).
  • The cheese is hung to drain overnight, taking on the beautiful, rustic texture of the woven leaves on its exterior.
  • The perfect pairing for the northern table

    In towns like Chefchaouen and Tetouan, a breakfast spread is considered incomplete without a fresh disc of Jben. Because it is unaged, the cheese possesses a bright, lactic acidity that cuts perfectly through the rich, heavy olive oils of the region. It is most commonly served alongside hot, flaky Msemmen flatbreads, smeared with dark mountain honey, and accompanied by a handful of curing black olives.

    The best way to serve fresh Jben at home

    1. Do not cook or melt Jben; its delicate, crumbly texture is meant to be enjoyed raw, spread over warm, toasted bread. 2. For an authentic savory treat, drizzle the cheese heavily with a peppery extra-virgin olive oil and a dusting of wild, dried oregano (za'atar).
