Braised Moroccan Chicken or Chicken mhamer is an original recipe from Morocco

which is also frequently called “Moroccan chicken”. This is a recipe for chicken cooked in a casserole so that it is tender and then cooked in the oven to brown it.

It is served mainly with olives and candied lemon and it can be accompanied by a plate of fries.

Wash the chickens thoroughly by rubbing them with lemon and salt and let them drain.

Prepare a marinade with 2 finely grated onions, crushed garlic, saffron, ginger, chili, cinnamon, smen pepper, and salt. Work this mixture well, and coat the chicken outside and inside.

Pour the oil into a large pot, add 2 very finely chopped onions, put the chicken on top soaked in its sauce, and simmer over very low heat. Sprinkle with 2 glasses of water, add the tied bouquet garni, and cook over medium heat.

Turn the chicken often so that it is well cooked on all sides. To know if the chicken is well cooked you must check with your hand or even a knife that the flesh comes off easily. Do not hesitate to add water if you notice that the chicken is not well cooked and that there is more sauce.

Remove the chicken once cooked, and roast it in the oven for 15 to 20 minutes.

Add the candied lemon cut into quarters, and the olives to the sauce, and simmer over very low heat until you have a very thick sauce. Remove the bouquet garni.

Arrange the mhamer chicken in a presentation dish drizzled with its creamy sauce and decorated with lemon wedges and olives
