Gazelle Horns translates from Moroccan Arabic as “Kaab el Ghazal”

These crescent-shaped cookies are famously known as Gazelle Horns or “Cornes de Gazelle “in French. They’re frequently served on special occasions.

Prepare the dough :

Melt the margarine in a bowl in the microwave. Pour the flour into a bowl. Dig a well in the center and add the whole egg, melted margarine, orange blossom water, and a little warm water. Work the mixture by hand, kneading it, until you obtain a smooth homogeneous paste. Cover the bowl with a clean kitchen towel and let the dough rest for 2 hours at room temperature.

During this time, prepare the filling: Melt the margarine in a microwave-safe bowl. Mix the almond powder with the melted margarine, powdered sugar, and orange blossom water in a container. Form small puddings with the mixture, using your hands, then place them as you go on a large plate. Reserve chilled..

When the dough is ready, preheat the oven to 160ºC or th. 5-6. Roll it out into a rectangle on a floured work surface using a rolling pin. Cut triangles out of the rectangle of dough using a cookie cutter. Take the puddings out of the fridge. Place a sausage on each triangle of dough. Close the triangles of dough on the small sausages and give them the shape of crescent moons. Place these gazelle horns on a baking sheet lined with parchment paper. Bake the gazelle horns for 10 to 15 minutes or until they are lightly golden.

Once out of the oven, let the gazelle horns cool on a wire rack before removing them from the baking sheet. Store them in an airtight container until serving.
