Ingredients

250 g lamb meat
250 g chickpeas soaked the day before Or canned chickpeas
1 large onion
1 tablespoon smen Or vegetable oil + 1 tablespoon of margarine
100 g lentils
1 bunch coriander about 50 g
1 bunch parsley about 50 g
1 stalk celery
300 g very juicy tomatoes Or 4 large tomatoes
150 g tomato puree
50 g flour
1 teaspoon ginger
1 teaspoon cinnamon
1 chicken cube
salt, black pepper to taste
1 pinch saffron Or turmeric
50 g rice
100 g bird tongue paste Or 1 handful of vermicelli

Harira in Morocco is a generic term for cereal-based soups.

Harira It’s a popular soup that can be eaten at any meal of the day. It is a complete and unique dish containing meat (beef and/or mutton), lentils, chickpeas, vermicelli, rice, vegetables, green coriander, saffron, caraway, or some spices. During the 30 days of Ramadan, each house prepares this fragrant soup.
It is often eaten with beghrirs, small honeycomb pancakes served with melted butter and honey, shebbakias, cakes fried in oil and coated with honey.

This soup should be eaten loudly.

Steps

Chop the onions, parsley, coriander, and celery and mix the tomatoes (I use canned tomatoes Otherwise, peel the fresh tomatoes and remove the skin).

In a pot, brown the meat in small cubes, add the onions, parsley, coriander, and celery and let sweat for a few minutes.

Add the spices (salt, pepper, ginger, saffron (turmeric for me), cinnamon), as well as the chicken cube, brown. Add the chickpeas soaked the day before but if canned add them at the end of cooking.

Pour 2L of water, cook for 30 minutes.

Add the lentils and the mixed tomatoes, and cook covered for 20 minutes.

Dilute the flour in a bowl of water, and do the same for the tomato paste, pour the mixture into the pot while stirring for 10 minutes. Add the rice and vermicelli sprinkles. Leave to cook for 15 minutes uncovered, stirring regularly, or until the rice and vermicelli are cooked.
