Moroccan eggplant Zaalouk is a delicious mashed eggplant.

Cooked with Eggplant and Tomato Salad, it is a really delicious recipe from Moroccan cuisine.

I prepared this Moroccan eggplant zaalouk recipe in a slightly different way from the known one, it is an express method, in 20 minutes the zaalouk was ready to eat with Moroccan bread.

clean and peel the zucchini and aubergine.

cut everything into pieces, and put it in a pressure cooker.
