Moroccan Fish with turmeric couscous

Ingredients

Adjust Servings:
2 tablespoons olive oil
3 cloves garlic, chopped
2 tablespoons tomato paste
1 teaspoon sugar
½ teaspoon salt
½ teaspoon black pepper
2 red pepper, cut into strips
10 whole cloves of garlic
1 cup water
3 fish fillets of your favorite fish
⅓ cup olive oil
2 tablespoons smoked paprika
½ teaspoon turmeric
Juice of ½ lemon
½ lemon sliced
½ cup chopped cilantro
More parsley and cilantro- to garnish if desired

Moroccan Fish with turmeric couscous

In a mixing bowl, add ⅓ cup olive oil, 1/2 lemon juice, turmeric and paprika. Mix. Dip the fish fillets into the mixture and coat on all sides. Let sit until ready to use. It will help absorb flavor.

Add 2 tablespoons of olive oil to a pot, add the chopped garlic and fry on medium heat until the garlic is fried.

Next the tomato paste, sugar, salt and pepper as desired .
Add the red pepper. If you want it spicy you can add a chili or some Aleppo pepper. Stir and fry for 2 more minutes.

Add the whole garlic cloves and the 1 cup water. Stir. Cover your tagine cook on simmer for 15 minutes.

Add the cilantro. I love the flavor of it cooked. Reserve some to garnish. Add the fish, sauce and lemon slices. Cover again simmer for 10 minutes.

Garnish with fresh cilantro and serve hot. It’s great with bread, rice or couscous. Anything you can top with the delicious sauce
