Ingredients

  • 200g Premium Diced Beef or Lamb (optional)
  • 1 cup soaked Brown Lentils
  • 1 cup soaked skinless Chickpeas
  • 1 kg Fresh Roma Tomatoes, grated
  • 1 large Onion, finely grated
  • A massive bouquet of fresh Coriander and Parsley, minced
  • 2 sticks of Fresh Celery with leaves, minced
  • 1 tbsp Ground Ginger
  • 1 tsp Turmeric
  • A pinch of Saffron
  • Flour and water mixture (Tadouira) to thicken
  • A handful of broken Vermicelli noodles

Start the base

The magic starts at the base. In a large heavy-bottomed pot, vigorously sauté your meat, onions, celery, and half of your fresh herbs in olive oil with your ginger and turmeric until the kitchen smells incredible.

Add the soaked lentils, chickpeas, and grated tomatoes, then pour in enough water to cover everything generously. Let it simmer vigorously for 45 minutes until the pulses are completely tender.

Now for the most important step: the "Tadouira". Slowly whisk in your flour and water mixture into the boiling soup, stirring constantly to create a silky, velvety texture without any lumps.
