Meskouta (Authentic Moroccan Orange Cake)

Community Feedback

Welcome to my table! Meskouta is the quintessential Moroccan orange cake served for afternoon tea and family gatherings. Fragrant with fresh orange juice, citrus zest, and baked in a traditional bundt ring pan lined with toasted sesame seeds, this classic cake is naturally dairy-free (made without milk or yogurt) and yields an exceptionally tender, fluffy crumb every single time.

Ingredients

8 servings
  • 4 large eggs, at room temperature
  • 1 cup (200g) granulated sugar
  • 3/4 cup (180ml) vegetable oil (or mild sunflower oil)
  • 3/4 cup (180ml) freshly squeezed orange juice (from 2 to 3 sweet oranges)
  • Zest of 2 organic oranges (finely grated)
  • 1 teaspoon pure vanilla extract or 1 teaspoon orange blossom water (mazhar)
  • 2 1/2 cups (320g) all-purpose flour, sifted
  • 1 tablespoon (14g) baking powder
  • 1/4 teaspoon fine salt
  • 2 tablespoons toasted white sesame seeds (to line the baking pan)
  • 1 tablespoon soft butter or oil (to grease the pan)
  • Powdered sugar or warm apricot jam for finishing (optional)

Step-by-Step Instructions

1

Preheat your oven to 350°F (175°C). Thoroughly grease a 9- or 10-inch fluted ring pan (or bundt pan) with oil or softened butter, then sprinkle the toasted sesame seeds all along the inside of the pan until evenly coated. Tap out any excess.

2

In a large mixing bowl, beat the eggs and granulated sugar together with an electric hand mixer for about 4 to 5 minutes until the mixture turns pale, thick, and ribbons fall from the beaters.

3

Slowly pour in the vegetable oil in a steady stream while continuing to beat on low speed until smoothly emulsified.

4

Add the freshly grated orange zest, vanilla extract (or orange blossom water), and freshly squeezed orange juice. Stir gently to combine.

5

In a separate bowl, whisk together the sifted flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture in two batches using a spatula, mixing just until the batter is smooth with no flour pockets remaining. Do not overmix.

6

Pour the fragrant citrus batter into the prepared sesame-lined bundt pan. Gently tap the pan on the kitchen counter twice to release any trapped air bubbles.

7

Bake on the center rack for 38 to 45 minutes, or until a wooden skewer inserted into the thickest part of the cake comes out completely clean and the top is richly golden brown.

Allow the cake to cool in the pan for 10 minutes, then invert it onto a wire cooling rack. Dust lightly with powdered sugar or brush with a thin sheen of warm apricot jam. Slice warm and serve with hot Moroccan mint tea.

Authentic Tips

  • For the best aroma, rub the orange zest into the sugar with your fingertips before beating with the eggs; this extracts the essential citrus oils.
  • Lining the buttered bundt pan with toasted sesame seeds adds an irresistible nutty crunch to the outer golden crust.
  • If you love lemon, replace half the orange juice with fresh lemon juice for a zesty Moroccan Lemon Meskouta.

Grandmother's Secret

"Always beat the eggs and sugar until pale and fluffy before adding the oil. Moroccan grandmothers never use milk or butter in a classic Meskouta—pure orange juice and sunflower oil create that signature airy, moist crumb that stays soft for days."
